I’ve been totally slacking on my posts of late – sorry!
I do have a neat “Mom-Tip” for you, though.
We LOVE pancakes in our house. (When I was pregnant with my first kiddo, I wanted them EVERY. DAY. No joke!) But with two kiddos that seem to get into one thing or another every time I turn my back for more than 5 seconds, making pancakes can get…erm….stressful.
Enter the pancake muffin. I absolutely love these.
It used to drive me crazy when my mom told me her recipes using her “a little of this, about this amount” measurements, but guess what? That’s just the way we roll.
So here’s the recipe (I double this):
Preheat the oven to 375 (you may want to experiment with the heat and the amount of time).
2 cups of baking mix (Bisquick or the generic version)
1/2 a cup of milk (you can play with this a bit to get the right “muffin” consistency)
about 6 oz of yogurt, any flavor (though honestly I just glop a bunch into the bowl)
Mix the above ingredients, then fold in frozen blueberries if you wish.
Bake for about 10-15 minutes, or until a fork inserted in the center comes out clean. I’ve found that they don’t brown totally, but you can play with this too.
Pour your syrup on and enjoy!
See? Easy, stress-free (okay, LESS stress!) pancakes. And you can read to or play with the kiddos while the pancake muffins are baking.
